Berry French Toast Casserole – Breakfast Casserole Recipe

French toast casseroles are easily one of my favorite things to make for breakfast on a holiday morning. Usually there’s all kinds of fun things going on during a holiday morning and that’s no exception on Easter morning. As kids, my brother and I would wake up in the morning and immediately go right into our egg hunt. The Easter bunny came while we slept and left behind the eggs and baskets, so we were always pretty anxious to get started.

Enter this super easy breakfast casserole. You can throw it together easily the morning of and refrigerate for a couple hours, or even put it all together the night before, refrigerate it overnight.

I’m particularly excited to share this version of french toast casserole with you. I am a big fan of the strawberries and blueberries in it. They add that fresh pop of flavor that I love. And the bread used in the recipe is non other than Kings Hawaiian Sweet Bread. If you’ve never had this bread before, you need to get some immediately.

The first time I had this bread was way back in high school. A friend introduced me to it and I have been a lover ever since the first bite. It’s always super soft and has just the right hint of sweetness to it. I don’t normally just eat bread on it’s own, but this bread is so tasty, I will eat them any time. If you ever have a hard time finding it, check the deli section of your grocery store. That’s where I usually find it.

So yea, I love love love this bread. And the bit of sweetness it has is perfect for this french toast casserole. I ate it with some syrup, but the hubs didn’t think it even needed it because the bread lent just the right amount of sweetness.

I used the round loaf of bread for this casserole, but if you have the rolls, those will work too. You’ll need about 8 cups of bread pieces total. You can break up the bread and immediately add it to the casserole. No need to let it sit out and firm up, though you could do that extra step if you prefer.

The strawberries and blueberries are layered into the bread pieces. One layer of berries in the middle and then the rest on top.

The eggs, milk, sugar, vanilla and cinnamon are all whisked together and poured over the top of the bread. Be sure to pour the egg mixture evenly over the bread, wetting all of the bread in the process.

Once you’re ready to bake the casserole, make the crumble topping. You’ll want to make sure the butter is nice and cold. Cut the butter into the flour, sugar and cinnamon mixture until it’s crumbly. Sprinkle it over the top of the casserole and bake.

French toast casserole is the kind of casserole that some people like a little more cooked and some people like it a little less cooked. I’m a happy medium kind of gal. If you want it a little more custard-like, cook it a little less. Cook it a little more for a firmer texture.

This casserole really is perfect for Easter morning. Easy and delicious and great way to try King’s Hawaiian Sweet Bread. So good!

Description

This Berry French Toast Casserole is absolutely delicious and so easy to make. With flavorful pops of fresh fruit, it’s the perfect family breakfast or brunch!

Ingredients

  • 1 package Kings Hawaiian Sweet Round Bread
  • 1/2 cup blueberries
  • 1/2 cup chopped strawberries
  • 4 eggs
  • 1 3/4 cups milk
  • 1/2 cup sugar
  • 2 tsp vanilla extract
  • 1 1/2 tsp cinnamon

CRUMBLE TOPPING

  • 1/4 cup flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 stick butter, cut into pieces

Instructions

1. Grease a 9 x 13 casserole pan.

2. Tear bread into chunks. You’ll need about 8 cups total.

3. Spread half of the bread evenly in the bottom of the pan.

4. Add about half of the blueberries and strawberries.

5. Add remaining bread and top with remaining berries.

6. Whisk together eggs, milk, sugar, vanilla and cinnamon. Pour evenly over bread, making sure to wet all bread pieces.

7. At this point, you can cover and refrigerate the casserole for at least two hours, or overnight.

8. When ready to bake the casserole, preheat the oven to 350 degrees.

9. Mix together flour, brown sugar and cinnamon for crumb topping. Add butter and cut into the dry mixture until it all comes together and is crumbly.

10. Remove casserole from fridge and sprinkle crumble topping evenly over casserole.

11. Bake for 30-40 minutes. For a softer, more moist texture bake closer to 30 minutes. Bake closer to 40 minutes for a firmer texture.

12. Sprinkle a little powdered sugar on top and serve with syrup.
