  • Bread crumbs (regular breadcrumbs, Italian breadcrumbs, or panko will work!)
  • Garlic powder
  • Grated parmesan cheese

  • Mayonnaise

  1. Preheat oven to 425°. Spray a baking sheet with cooking spray or line with parchment paper. Set aside.
  2. In a small bowl, beat egg with a fork until well combined for the egg wash dip.
  3. In another shallow bowl add the flour.
  4. In a third bowl fill with bread crumbs. Toss the breadcrumbs with garlic powder and Parmesan cheese, and salt and pepper to taste. Then set aside.
  5. Dip the zucchini strips into the flour (shake off the extra flour) then dip it in the beaten egg mixture, and then into the bread crumb mixture. Make sure all sides get coated well. Place the sticks on the prepared baking sheet in a single layer.
  6. Bake at 425° for about 20 minutes, or until golden brown and crispy yet tender zucchini.
  7. To make the creamy BBQ Sauce, mix BBQ Sauce and Mayo.

We are trying to eat a little healthier so we have switched from deep fried fries to these Crispy Zucchini Fries! My kids loved them!

  • 2 large eggs beaten

    It is listed in the above instructions, #5. To make the creamy BBQ Sauce, just mix BBQ Sauce and Mayo. Use the same amount of BBQ sauce as mayo!
